Cured meat. Believe it or not, was the beginning of Preserve. For me, there's something truly unique to this type of food preservation. It's not just that raw meat is somehow magically made safe and stable without the use of fire or heat, it's that the texture, smell, taste and appearance is not achievable through any other means.

We look forward to exploring this category with post from myself as well those that on the team here at Preserve whom take on these fun and patience testing projects. It is my hope to have some guest authors in order to learn from some of those in our community whom have been practicing these techniques in this area for generations.
