Preserves are preparations of fruits, vegetables and sugar, often canned or sealed for long-term storage. My first memory that opened up this widely used method for myself was my grandmother's jar of jalapeno jelly that came out with breakfast every morning for toast. 

We now make a number of Preserves for use at the restaurant and the market that all owe their existence to that little jar in the back of the fridge. We now have over years became dependent on quite a few other recipes we plan on sharing with you.
